Serves 2
Ingredients:
- 2 slices thick bread (brioche or milk bread works best)
- 1 double espresso (cooled slightly)
- 1 egg
- ¼ cup milk
- 1 tsp brown sugar
- Tiny pinch cinnamon
- Pinch salt

Butter for pan
Method:
- Whisk together:Espresso, egg, milk, brown sugar, cinnamon and salt
- Dip bread briefly (don’t oversoak).

Cook in buttered pan on medium until golden both sides.
Top with:
- Toasted pecans or almonds
- Light maple/honey drizzle
- or just a dusting of cocoa
